Why does Thai text look cramped in templates?

Templates are designed for Latin script. Thai has tone marks above and vowels below, so it needs more line height — roughly 1.7 to 1.8 rather than 1.4 — and a font built for Thai such as IBM Plex Sans Thai, Noto Sans Thai or Sarabun. Always adjust line spacing after you paste Thai copy.
